Keto Chocolate Cupcakes ūüßĀ

Ingredients:

Cupcake:

52 g

ZoRaw Protein Dark Chocolate bar

 2 Large Eggs
3 Tbsp Salted Butter
3/4 Cup Whole Milk
1/4 Cup Unsweetened Cocoa Powder
1/4 Cup Erythritol 
3/4 Cup Coconut Flour
1/4 Tsp Vanilla Extract

 

Frosting:

52 g

ZoRaw Protein Dar Chocolate bar

3/4 cup Powdered Erythritol
2 Tbsp Heavy Whipping Cream
1/2 Cup Butter 


Directions:

Cupcakes:

  1. Pre-heat oven to 350 degrees F. Place muffin liners into tin and use butter (or coconut oil) to ensure cupcakes release easily from liners.
  2. In bowl, combine butter, sugar substitute and eggs until well mixed.
  3. Add in milk, vanilla extract and melted ZoRaw. Mix until combined.
  4. Add coconut flour, baking soda and salt. Mix until combined. Add cocoa powder last and mix.
  5. Bake for 15-20 minutes until toothpick comes out clean.
  6. Allow cupcakes to fully cool before frosting them (30-45 minutes)

Frosting:

  1. In bowl, whip together butter, sweetener and melted ZoRaw.
  2. Add whipping cream and combine until desired consistency (more whipping cream for thicker frosting).
  3. Ice cupcakes once fully cooled.
