The two numbers that decide what reaches your bloodstream
Net carbs = total carbs − fibre − sugar alcohols. Fibre like inulin and sugar alcohols like isomalt and erythritol pass through digestion slowly and barely raise blood glucose, so we subtract them out — that's why a ZoRaw bar counts as only ≤3g net despite a bigger total-carb number on the label.
0 = no effect on blood sugar · 100 = pure glucose
The sweetener matters just as much. Monk fruit has a glycemic index of zero, so unlike cane sugar (GI 65) or even maltitol (GI 35–50, the sweetener in most "sugar-free" chocolate), it sweetens every bar without touching your blood glucose at all.
Less glucose released, and none of it from a high-GI sweetener — together that's what keeps the rise gentle, with no hard crash after.
