The diagnosis that became a thesis

Eliminating refined sugar from her diet, Gill put her diabetes into remission. The hardest sacrifice was chocolate. A trip to Peru, where she toured a local chocolate-making workshop, became the catalyst for what would become ZoRaw. Inspired by the natural purity of cacao at its source, she returned to Canada and began experimenting with formulations in her basement.

Working with food scientists at Canadian universities and applying her biochemistry training, Gill spent more than a year iterating on formulas before bringing the product to market. She partnered with co-founder Tanveer to launch the brand and scale operations.

From basement to 4,000 stores

What started in a home kitchen now operates as a full chocolate factory in Mississauga, Ontario. ZoRaw produces up to 30,000 bars per shift, employs a team of 12, and distributes through more than 4,000 stores across Canada including Metro, Sportchek, 7-Eleven, Longo's, Fortinos, Familiprix, Nature's Fare, and Thrifty's/Healthy Planet.

The brand has been featured on The Amazing Race Canada and was recognized as one of six grand prize winners in the 2024 TELUS #StandWithOwners program, receiving over $200,000 in funding and resources.

Innovation-led manufacturing

ZoRaw's manufacturing approach reflects Gill's biochemistry background. The company uses AI and automation in its production processes, with systems designed to adapt to challenges such as the 300% year-over-year cocoa price spike the industry experienced. Quality testing and ingredient transparency, including heavy metals testing, are documented in detail.

Mentorship and advocacy
